Vegan Rasta Pasta


Hey Queens, here is a delicious pasta that I made the other night and it was so good so I thought that I would share it with you!


It has Jerk seasoning in it so it's a little spicy but if you don't like spice, just don't put as much of the Jerk seasoning but it's really simple!


Ingredients:

1 red bell pepper

1 yellow bell pepper

1 orange bell pepper

1 green bell pepper

(all bell peppers should be cut in medium size strips)

1 medium onion

1/4 cup of fresh basil chopped or dried basil is fine

2 medium plum tomatoes chopped

1 bunch of thyme

1/2 cup of chopped parsley

1 can & half can of unsweetened coconut cream or maybe you need the whole two cans but just see or eyeball it

1 tsp or 1 tbsp of Jerk sauce (I used Caribbean Sunshine from Kroger)

Sea Salt & Onion Powder to taste

1 box of penne pasta



Instructions:

Start off by boiling your penne pasta in a separate pot and put it to the side!


Meanwhile, In a skillet with a little grape seed oil, sauté the bell peppers , onions, tomatoes, basil, thyme, and parsley and let cook for a few minutes.

Then add the jerk sauce to the sautéed mixture

Then add in the coconut cream and stir it around for a few minutes

The cream sauce will start to thicken and you can also add your sea salt and onion powder to taste

And once the sauce is to your liking, add the cooked pasta and stir it around good so that the sauce and the flavors are distributed evenly and that's it!
