No Tuna Chickpea Salad
2 cans of Chickpeas (rinsed and drained)
1 stalk of chopped Celery
1/2 red onion
1/4 cup of Vegan Mayonnaise
1/4 cup of Sweet Relish (Or more if you'd like)
1 tablespoon of Agave
1 tablespoon of Dijon Mustard
Add Chickpeas to food processor and pulse a little not a lot because you don't want it mushy and then pour in bowl.
Add all other ingredients to the chickpeas in the bowl and stir until combined and enjoy with your favorite crackers, enjoy with croissants, make a sandwich, or enjoy as a salad topping!
